- 1/8 cup Tomato (chopped)
- 1/8 cup Beetroot (chopped)
- 1/8 cup Onion (chopped)
- as needed few Fresh Coriander leaves chopped
- 1 tbsp Pudina (chopped)
- 1 green Chilli (finely chopped)
- 1-2 tsp Lemon juice
- 1/8 cup roasted & coarsely crushed Peanuts (or chopped)
Steps to make to make Sprouted Moong Salad
- To prepare 1 cup sprouts at home: - Rinse 1/2 cup green Moong in water 2/3 times. Then place them in a deep pot and add enough water. Cover and soak for 6 to 7 hours. After 6 hours, drain the water through a colander. Wrap Moong in muslin cloth, tie this cloth loosely. Then place this tie cloth in a vessel. Cover and keep this vessel in a warm place for 10 to 12 hours.
- For Blanching Sprouts:-
Boil 3 cups of water in a vessel. Add 1/2 tsp salt and moong sprouts in boiling water and boil it for 2 mins. Using colander drain the water completely from sprouts. Keep them in the colander until sprouts are completely dry. Sprouts should be soft and slightly crunchy. - In a large serving bowl, take 1 cup blanched sprouts. Add all chopped veggies like cucumber, tomato, beetroot, onion. Add coriander leaves, pudina leaves, chopped green chillies.
- Then add cumin powder, chilli powder, amchur powder and salt. Combine spices well with sprouts.
- Squeeze lemon juice. Mix everything well. Decorate with lemon slice and Pudina sprig. Finally, garnish with roasted peanut and serve Sprouted Moong Salad immediately.
